Strawberry, Blueberry, Rhubarb Pie
Ingredients
3 cups rhubarb, cut into small pieces
2 cups of strawberry, cut into small pieces
1 cup of blueberries
2 cups sugar
1 cup flour
1 tsp salt
3 eggs
double crust pastry pie
Directions
1. Mix together the strawberries, blueberries and rhubarb, then add 2 of the eggs, the flour, sugar, and salt.
2. Place the pie crust into a pie dish then pour the mixture on top. (you may need to make 2 pies).
3. Cover the mixture with the rest of the pie crust and bake at 425F for 15 minutes, reduce the heat to 350F then bake again for 35 minutes
4. Allow to cool for 30 minutes and serve with vanilla ice cream.
